Depending on your definition of "cores", they already do.

GPUs are already multi-core. NVIDIA calls "cores" Streaming Multiprocessors (SM). AMD calls them Compute Units (CU).

They already do; several thousand in fact.

If you are talking multiple discrete GPUs on a card, that also has already happened several times with cards like the AMD HD7990 or GTX Titan Z.

But, yes, in the near future we will be seeing consumer grade multiple GPU chips on a single substrate to make very large GPUs. AMD already has these in their data center GPUs.

And Intel calls them Execution Units if anyone wanted to know.
