Well, in terms of performance, unless your drive is really full, there shouldn't be any difference between the two options. On the other hand 2 drives are always better than one in my opinion, if your budget allows it and if you have enough available ports. This is some sort of reassurance that if something goes wrong with the OS drive, your projects won't get affected by that, as they'll be on a completely separate SSD and the other way around. Although, I'd strongly recommend that you keep a backup of those projects and any other sensitive data which you can't afford to lose, no matter which option you decide to go with.
