Thanks for the answer and your suggestion!
Yep, I'm aware of what Puget Systems says, I was inspired by their configuration

Let's say that the RTX 2080 8GB performs well, the RTX 2080 11GB even better, but with this mindset there is not limit
😉 I'm saving 450€ with the 8GB and it's relevant
Here is my choice

About the rest, is there any reason why you suggested that
CPU Cooler and
Power Supply in comparison with those I chose?
About the RAM, 4x16 sounds good, but one more time the price just gets too high
🙁
I have now a very tricky choice about the Corsair Vengeance LPX DDR4-RAM 2x 16GB, which one is better between:
- the 3200 Mhz cl16 --> 170€
- the 3600 MHz Cl18 --> 220€
Unfortunately the price for the 3600 MHz Cl16 is too much higher --> €324

Thanks again!
Ok then. Let me break this down for you.
First, NVENC accelerated 264 video encoding is faster and consumes less power than legacy CUDA-based or CPU-based encoding. The PugetSystems document is actually framed on this premise. And if you go by that logic it is better to build something like a 3800x + 2080Ti rather than something like 39000x + 2080Super, as the former (more GPU power than CPU power) will give you adequate balance for such NVEMC encoding.
Second, if you check your build vs mine, at the time of posting the reply mine was cheaper than yours with all good quality highly rated parts and included both 3900x as well as 2080Ti along with RAM prices (missing from your build, more on this later). As I can see that the monitor has changed price since then, I can suggest you a substitute to still keep the prices in similar bracket.
For your CPU Cooler, I choose an unit which performs similar as the Noctua but actually is cheaper and more beautiful...

Cryorig is a company formed by system engineers and they are very highly rated.
Again for the PSU, I choose something very high quality but not ripping the budget...

Most Corsair PSUs are made by Seasonic, one of the most reputable power supply unit manufacturers in the PC world.

Here is a guide for SSD too...

Remember, SSD speeds are anyways quite fast and you wont be able to make out one from the other mostly in real time scenarios.
Note, that these charts are not Gospel but gives you a rough idea for reference purpose.
Now coming to RAM, 3600Mhz CL16 is the sweet spot for Ryzen 3rd gen. and I have included the same in the build...

They will perform in the similar ballpark for the rated frequency and latency, regardless of which brand you choose.
Edit: The front fan of the larger coolers are usually adjustable for RAM clearance. Alternatively you can go for relatively lower profile Crucial Ballistics kits...
