All good, except you should get the gtx 1070 coming out tomorrow instead of the 970. Or, if it's too expensive there, the RX 480 coming at teh end of the month. Seriously, don;t buy a 970 these days!

Because, for $379 you could get a 1070 in a month that is as powerful as a 980 ti, or an RX 480 for $200 that will be as powerful as a 980 or more.
Agreed that you should get a 2x8 kit ram.
And a G-sync monitor if you'll go with an Nvidia card: http://au.pcpartpicker.com/product/wzKhP6/acer-monitor-umhb0aaa01
or FreeSync if you go with AMD: http://au.pcpartpicker.com/product/Mf98TW/aoc-monitor-g2770pf\

Those prices are USD.

GTX1070 for $550 not $379 in Australia

So what? Is OP buying the 970 from outside australia? Isn't it more expensive also? What's the point of your correction?
I specified that the prices are in USD..

OP was never going to buy 970 from outside of Australia because the list he provided has the GTX970 listed with Australian price.
Why provide US price instead of Australian.
You did not specify that the prices are in USD not in AUD

Actually, i did :)

K,
Even I recommend him to choose GTX1070 as it is a possible option in his budget and that is the important part. If he had a low budget then it would make sense to compromise with GPU but with 2000AUD he can easily get GTX1070

Emphasis on G-Sync support.

EDIT: OP, i must point this out: for 27" teh sweet-spor resolution is 1440p and the GTX 1070 can handle that very well. G-sync monitors with those specs begin to get expensive, though. If you can afford 350 AUD more, get this in stead of teh one in the build: http://au.pcpartpicker.com/product/zj8Zxr/asus-monitor-90lm00u0b01370
