I am attempting to conduct my first build. I have spent a lot of hours researching since this is my first attempt. I am a big fan of the RVZ01 (not that I have to use SFX power supply!) and the 750 TI. I am trying to stay on a decent budget (~$700-800). Below are my components. I am a little concerned about only 300W power supply, but NVIDIA only used a 300 W supply in their recommended build.

I was thinking of going intel i5 since I am new to this and a little more comfortable with intel vice AMD, but could be pursuaded for to change to lower my budget (already at upper end). I am just not very knowledgeable about how the processors compare.

Additionally, since I am going to be using this as a HTPC, any recommendations for wireless keyboards or mice would be appreciated. All of them seem to have poor reviews. Thanks!

That power supply should be fine unless you planned on upgrading to a better video card later. As for the keyboard and mouse ive seem to notice its hit or miss with the wireless ones. I bought a nice Logitech setup that worked great so one of my friends bought the same one and it was horrible for him
