My Start menu...not like everyone else's

I just upgraded from Windows 7 to Windows 10. It's alright so far, but I have some gripes about the Start Menu. It seems as though my Start Menu isn't like every other representation I've seen across the web.

In promotional/introductory videos and images, I've seen the Windows 10 Start Menu very similar to that of Windows 7. The Power icon is on top and there are no extra entries in the bottom. When you click "All Apps", the menu opens up to reveal the apps as displayed in Windows 7.

But my Start menu is not that way. My power icon doesn't appear on top -- rather, near the Start Menu button in Power Options. When I click "All Apps", it opens up to reveal all my apps in a "phone book"-type format...alphabetized, separated at the letter (A...B...C..., etc.). And right-clicking most apps doesn't allow me to delete, only Pin/Unpin. In addition, my Start menu theme seems to be dark, not light. And when I access "Taskbar and Start properties", there's NO Start tab.

What gives? What version of Windows 10 am I using? Why is my Start Menu different from everyone else's?

I'm frustrated here...any help is desperately appreciated. Thanks in advance.

As far as I can tell, what you're missing are actually changes to the UI that were made between the Start Menu in the Beta and the one that is currently deployed. For example, the sample photo you provide in your original post, of the Start Menu that you want, is posted here:
