Where I live there are some cases where NAS drives (WD Red, Seagate Ironwolf) are cheaper than their same size desktop counterparts (WD Blue, Seagate Barracuda). Would it be fine if I used a NAS drive without any RAID setup for storing music/video and running BitTorrent onto it? I know they're built to run 24/7 and are good with RAID, neither of which I'll be doing, but I'm wondering about any potential disadvantages.

You should be fine. I've had Purple drives run on a desktop as well and they were fine as well. Mind you, the drive I'm referring to was also used to store video, music and media albeit the drive ran hotter than all the other desktop drives.
