What is the best possible Gaming setup i can assemble for under 1200$?

Is it a good idea to buy pre-assembled pc off Amazon or buy parts and build one on my own?

I'd be satisfied with a 1k Display as long as I get smooth performance on high settings on most of the games.

Chose a GTX 1060 6GB because it is perfect for 1080p gaming. An Intel i7 8700 with 6 cores and 12 threads for any productivity tasks and CPU intensive games, huge 16GB ram for any multitasking you might ever throw at it. 500GB SSD for a snappy OS and essential programs + your most played games and 2TB HDD for bulk storage. Topped it all off with a nice looking Fractal Design case with a large side window, high quality PSU which will be able to handle any future upgrades (such as GPU, for example, because the next gen from nVidia should be arriving soon and you might want to take a look at that). Plus a quality mobo from ASrock.

I didn't include an operating system, though, because imho it's a waste of money when building a PC and that cost can be invested in other parts. A fully functional OS can be acquired for free from Microsoft's website. Just need to make a bootable USB out of it (at least 8GB USB). Then later on a license key can be purchased whenever there are more funds.
