Ivy Bridge will use the same chipset LGA 1155 as Sandy Bridge. LGA 2011 is definitatly an "enthusiast" chipset.

The i5-2500k should be fine. If your building now get the Sandy Bridge, if you're building later get the Ivy Bridge. There will always be something new "just about to be released".
