Need help on a first time build for around £1000 GTX 1070

I want to build my very first PC as mine has become outdated and slow and cannot run half of the new games I want to play, I also would like to future proof the best I can without spending too much, so I am asking for any help, I am very new at this, and want to build specifically around the new 1070 card from Nvidia.

Questions I Have
-Should I be getting a 850w power supply or is it overkill? (keep in mind I want to future proof)
-Is it simple to overclock and should I be doing it?
-How do I transfer over my windows and what should i be doing with my hard drives before I put them into my new PC? (format, factory reset etc.
-Is the case im using suitable for the parts im trying to build?

You can try this. Run Nirsoft's Produkey to retrieve your Windows 10 key. Then, use Microsoft's Media Creation Tool to download and create a bootable Windows 10 USB stick. Use that to install Windows 10 normally. If it asks for the key, skip that and continue the installation. Once installed, go to Activation and and see if it activated automatically or insert the key you retrieved if it hasn't. If it still won't activate, you will need to call Microsoft for activation and tell them you had to replace your motherboard. They may or may not activate it for you since your preinstalled version of Windows 7 is probably an OEM copy. If they won't activate it, you will need to buy a new license...

If you're not going to overclock, you can save quite a bit of money or put it towards a new monitor. You'll need to do a clean install of Windows and will need a new license unless you already have a retail version.

Overclocking isn't terribly difficult, there are guides here and elsewhere on the web. You can see some pretty significant gains in certain games and applications, but it isn't really necessary with an i5 and the money saved could get you a better graphics card or monitor. As far as Windows 7 goes, you will need to do a clean install using your original Windows 7 media. If you have the OEM version of Windows 7, it won't activate and Microsoft may or may not activate it if you call them.
