It's for the company I work at. A signing company. They currently use a Mac so going to a PC would be a major pain I am told with some of the files. I need it to be able to run the latest versions of Photoshop and quickly. I was told about 64Gb of RAM would be required. What else should I be looking at?

The $1500 model looks like your best bet. i5 turboing to 3.8 GHz, 8 gigs of 2400 ram, upgradable to 32 gigs(which should be enough), a 1 tb fusion drive, and you can configure it to up to a 1 TB SSD, and a Radeon Pro 560 GPU. Should rock photoshop pretty nicely.

You can check the other models as well here: https://www.apple.com/imac/specs/

Here is what Adobe says: https://helpx.adobe.com/creative-cloud/system-requirements.html

You don't need 64GB of ram for Photoshop. You will most likely have a Adobe Creative Cloud account, if so that link will show you the min and recommended requirements for all applications. The only app the chews through massive amounts of ram is premier pro video editing.

Are you planning on keeping the mac or going to a PC? *edit* sorry saw that you are keeping the mac, sorry about that also (lol)

Any recommendations on certain model types as far as the CPU goes? Also any idea on the speed of RAM?
