I wanted to add 2 extra via an adapter and i was looking at either another 2x 970 EVO plus or a 980 pro
based on whether i get a 3.0 or 4.0 adapter.
Mostly for gaming, i have an incredibly slow download and that's why i don't want to uninstall games

You will not notice any performance impact using 2.5" sata ssd devices.

Game performance will be zero difference.
Also, your board has only one PCIe 4.0 capable slot. Hopefully, you're using that for your GPU.
So a 980 Pro would be wasted in the other ones.
