I currently play competitively in fortnite, the game is not hard to run except for having more than 50 people end circle which destroys my i5 6400, i already have a gtx 1060 6gb that i don't really need to upgrade more a new cpu but being in Australia it costs a lot more for parts, is it worth paying 120 dollars more for an 8700k rather than a 8700.

Solution
Fortnite does not use many threads. 4 is sufficient.

The advantage of the i7-8700 and 8700K is that they have hyperthreading and consequently 12 threads.
The 8700 can turbo up to 4.6 on one thread when conditions are right.
The 8700K 4.7. But, the 8700K can be overclocked to perhaps 5.0 on all threads, a big plus.
Actually, why not save some money and buy a i5-9600K with 6 threads for less.
It can also be overclocked to near 5.0 on all threads.
You will need a Z370 or Z390 based motherboard and ddr4 ram.
What is your motherboard?
I do not think a 8700 or 8700K is going to work unless you have a 300 series lga1151 motherboard.

A K suffix processor is very worthwhile compared to the base processor because it can be overclocked
You will need a Z based chipset to oc.
That gives you some 20% better performance.

Forgot to mention I was needing to upgrade mobo

I'd wait for ryzen 3rd gen (maybe this year).
Probably You'll get decent setup at a price of 8700k CPU.

But... are You sure it's CPU problem? Did You check the CPU load?
This setup looks like it should handle this game without a problem.

P.S. How much RAM do You have?
