I'm going with
i5-2500K
8gb 1333
Radeon 6870
HDD1 128GB SSD
HDD2 320GB 7200 RPM

What is the difference between these three?

Would I be ok with the first one?

I don't plan on expanding too much....

The first one is basic and does not support dual GPU setups well, the second one is mATX but can do dual GPU's, third one does dual GPU's and has more connectivity than the others. You will be fine with the first one if you stick with a single GPU.

Beyond above, doodads and add-on chipsets. IMO none of them stellar for OC'ing, for that UD5 series and maybe the Gigabyte GA-Z68XP-UD4.
