It's been well over a decade since I built a system and I need advice on this build, I am trying to get back into understanding a proper build.

This system would be used mostly for gaming and I would be building it over the next few months. I need to buy a monitor, peripherals, and OS.

My total price would be under 1800$ CAN ideally. I know it's hard to predict future prices but I am just trying to see if I am on the right track. I am open to any brand or make.

not sure going a 5800x3d is a the right move personally cant say a 12600 is much better both dead or nearly dead platforms ..
if ARC770 the 16gb at least or a 6700xt with 12gb !!

8gb is more than enough for 1080p gaming. The 5800X3D will still last atleast 5 years before needing a platform upgrade.

5800X3D is better in comparison to 12600k.

If that Z690 board supports USB bios flashback, getting the 13600k with DDR4 will still net you about the same performance as the 5800X3D.

the only viable option is AM5 with DDR5 but that wont fit in the budget...

A reasonable list; you can build as is.
I have some thoughts:

Hyper212 was good in it's day, cheap and it works,
I had a hard dime getting one mounted level, There are better options.
Noctua NH-U12s for example.
Paste means less than you might think; no need to buy extra.
The paste supplied with a cooler will do the job.

Motherboard is ok, but does not include wifi.
I would look for a B660 or B860 based MATX motherboard that includes wifi.
For example:

Games are getting larger, I would start with a 2tb m.2 ssd.
Do not chase fast sequential benchmarks, you will not notice the difference.

A good quality device is the Intel 670P:

12600K can support much faster graphics cards.
To allow for such an upgrade, look for a 850w psu.
And, only buy quality with a 7 to 10 year warranty.
Seasonic focus/prime and Corsair RMx are good places to start.

Seems to me I have heard of issues with gigabyte power supplies

Yes, a good psu will cost you more.

Thankyou that was very helpful. I will start to look into these points you have made.

Currently using a MSI GE72 laptop I bought in 2015 and it still works great (had to replace fans four times though) but it will not play many of the new releases anymore. Still great as a family laptop for the kids.

Perhaps rather go with AM5 platform.
Ryzen 5 7600 is about as good as 5800X3D in gaming with the actual upgrade path for everything while 5800X3D has upgrade path for productivity workloads, but not for gaming.

Ryzen 5 7600 comes with its own cooler.
I imagine it is quite loud ,but trust me you get used to it more or less or just use headphones.
