New build and what graphics card to get

I am in the process of deciding what I want to get in my personal rig. As of now I have two friends that recommend 3 different cards. One recommends running two 1080's or 1080 Ti's in SLI. The other recommends a R9 295X2 running in crossfire with a R9 290. I'm torn between either way. Any recommendations. I also plan on using a Ryzen 1800X in the build but I am not as tech savvy as most when picking parts so if anyone has recommendations that would be great.

You say monitors -- plural, but not how many...

Get a 1080ti and see how it works. SLI or Xfire should only be a last resort IMO.

2 BenQ monitors. But I would want to go to three.
