New Build Feedback

Hey, all! I'm new to PC building, so I'd like some feedback. So, maybe this is pie-in-the-sky crazy, but here's my latest hare-brained scheme:

ASUS ROG X Maximus Hero with WiFi
i7-8700 Coffee Lake CPU
CORSAIR Vengeance LPX 8GB (2 x 4GB) 288-Pin DDR4 SDRAM DDR4 2400

I already have a corsair CX750M power supply and a EVGA Nvidia GeForce GTX 970 FTW graphics card. I don't want to replace this unless necessary, but I'm open to suggestions.

I havent decided on a cooling system yet, but I'm thinking either Titan FenRir EVO ($55) or
Noctua NH-D15 ($90)

I'm considering an AIO cooler, but I'm not terribly noise-sensitive. These fans seem to run quiet acording to reviews, and can offer more efficient cooling than some of the cheaper AIOs, but I don't want to spend big bucks on awesome hardware only to gimp it with an inefficient heatsink.

I'd want to use this for streaming/video editing/rendering and maybe photoshop

Any feedback from more experienced users appreciated! If I've missed something, please feel free to explain it to me in the manner you would use to explain things to a 5 year old. I won't be offended, and will actually appreciate it. I'm willing to do more legwork, of course, but I need to know what I don't know before I can go find it out, if that made any sense at all.

Thank you!

What would be the benefit to swapping out those components, besides the price?
I did some research that suggested 8GB of RAM was plenty, but then some more recent research (this morning) suggested 16GB would be more useful. Is more RAM still beneficial?
Thank you!
