Go the AM5 platform at the very least steer clear of Intel now ..

with 14th gen coming soon that is a new mobo and cpu where as AM5 life span is 2025 at the very least

I could recommend the 7800x3d but with the issues that its having unless youre going to wait till the findings the 7700x is a great buy..

Nothing wrong with the 4080 if RT is your thing but if the 7900xtx is cheaper to me its a better buy with its 24gb and better performance

always over kill your psu so 850w 80 platinum at the very least i run a corsair hx1000i

mobo is kinda a personal thing i hate gigabyte ( then im bias i get a bad product im done with it ) my asus rog board is flashy but expensive my msi mag x570 tomahawk has been a little beast so i would recommend the right MSI board ..
As for which one i would say go X670e ( yes more expensive ) but for the better chipset features the x670 will offer better life span !!

arctic freezer ii aio coolers ( while not the prettiest ) are the best of the best

A very good build; you can go as is.

My thoughts:

Considering the current issues with amd7000 series, I would stick with Intel today.

The cpu cooler is good, but I am partial to Noctua quality.
NH-D15 or NH-D15s would be my choice.
They are quiet and easy to mount.

On the ssd, I generally pick Samsung or Intel for quality.
They make all of their own component parts.

When buying a psu, I like to see a 7 or 10 year warranty.
It is one of the better indicators of quality. The unit you picked is 5 years.

Also, while 850w is fine for now, I could see a graphics card upgrade in the future.
I might go stronger, to 950w or more.
A psu will only use the power demanded of it, regardless of the max capability.

On windows, there are few features of PRO that are likely to be useful to you.
Used to be that PRO allowed you to defer updates better. Now, not so much.
I would buy retail. If you should ever want to upgrade your motherboard, your license will go with it.

Thanks for the feedback and suggestions everyone. I've swapped out the case, bumped PSU to 1000w and changed the CPU cooler.

I've decided to stick with nvidia as I do want to use raytracing and I have read that AMD are having issues with VR at the moment.
