The goal here is to build a system as cheap as I could to do 2 things:
1 - edit AVCHD video
2 - stream internet content and dvds over my home network using Tversity/PlayOn

Note: I have another 1 TB WD Green drive I am going to use as a mirror/backup.

Any comments or suggestions for improvement?
 
Is that not a good power supply? If that's the case then I will just go ahead and get a different one but keep the case.
 
It will be plenty, your computer won't use more than 200w under full load unless you add a discrete graphics card later, and you could add up to a 4830 or 9800GT and still be fine. The Wattage of the PSU isn't so much what matters as the Amperage that is provided on the 12v rails, the Corsair has lots of amperage to go around for your system.

If you look at the specs, the Raidmax PSU has 21A, the Corsair has 30A. Build quality is also very important, and Corsair units are some of the highest build quality around, raidmax PSU's are terrible.

I am in exactly the same boat as you for AVCHD editing and looking for an economical solution. When you are done, could you respond on this thread to comment on the performance of your system build and the AVCHD editing software you are using on it?

I would really appreciate that feedback before I spend the cash...

Seasonic, PC Power & Cooling, Antec, Silverstone, CoolerMaster Real Power pro series, BFG LS Series, OCZ, and a few others are good PSU's, but the Corsair 400cx is the best deal that I am aware of currently. I would go for that, I actually just bought one for a cheap budget build I am doing right now.
