So I'm building a new pc and I would appreciate the help of someone who actually knows what he's doing.
My build :
Intel i5 12600k
Aorus master 3070ti
Aorus z690 elite ax
Vengeance 32gb
H100i elite
What kind of psu would I need?
I'm looking at be quiet psu
Straight power 11 850w platinum
Straight power 11 1000w gold
Which is actually a better option?

Depends on what they cost really, and compared to what else is out there.

I'm sure either would work fine though. You've got about 500W worth of hardware there and both PSUs have enough overhead to handle something like the 3070Ti during brief power spikes.

I show those two at $175 and $270.

Corsair RM850x is currently $138
EVGA SuperNova 850W G5 $160
EVGA SuperNova 850W P6 $161
Straight Power 11 (gold) 850W $166

Based on what I am seeing in the way of reviews, the straight power lines from be quiet! are quite high end units from FSP.

I mean is 850w platinum better than 1000w gold or the other way around?

Depends on what you want to achieve I guess.

Higher efficiency or more available power. Higher efficiency PSU may be quieter since it has less waste heat to dissipate. But the 1000W may be large enough to run passively under the moderate load of your system. That would be up to your ambient temperature and the chassis you put it in.

Not sure anyone can definitely give you an answer without having a very similar system.

850w is appropriate for a 3070ti:

If a psu is sufficiently strong, it will loaf and the cooling fan will not need to turn on and you will have a quiet psu.
Efficiency matters a bit, but the difference between gold and platinum does really not amount to much.
A overly strong psu will only use the power demanded of it, regardless of the max capability.
Quality counts. One way to guess quality is to look at the warranty.
5 years for the straight power units is a bit lacking.
Look for at least 7 years and more likely 10 or 12.
Corsair rmx850 gold is 10 years:

Seasonic focus px-850 platinum also has 10 year warranty.
Of note is the fanless capability:
