Haven't been around for awhile even though I just retired as a senior network engineer.
First of all I still game but know my better half wants a machine to do video editing.

Parts all ready aquired.

Case lian li 011 Dynamic EVO

GPU EVGA 3080 TI FTW (waited on a list 8 months to get one at normal retail)

Just ordered EK AIO Elite 360 and replacement Noctoa Chromax NF-A12x25 2000 PWM fans.

In the Cart is a Alderlake i9 -12900K.

I do realize I'll need at least 64 GB of Ram, 2 TB m.2 boot drive, and at least 10 more TB of SSD storage Drives.

Here where I'm at. $500 max for the board, as future upgrade proof as possible over the next 4 years, durability, and some over clocking ability. With brands anything but ASRock I've had major issues with them. The others I have been lucky and never had any problems at all.

Any and all recommendations will be helpful and thanks for that. Just looking for a little more insight than just reading and watching the reviews.

That is pretty much what most of us do, read and watch reviews.

DDR4 or DDR5?

There are a few motherboard reviews out there for Z690, but given your leanings, you are going to want a very high end board with a lot of I/O and storage options. So 3+ M.2 slots and some SATA slots for bulk QLC SSDs.

Overclocking isn't really necessary. The CPU will take care of itself and the 12900k is already on the ragged edge of what the silicon can handle. Slapping that 360mm AIO and unlocking the power limits is about as far as I would go. Sounds like you are already set for Chassis, fans, and cooling, so not much else to add.

Been kind of looking at the Gigabyte 690 Aorus Master or the MSI Meg Z 690 Unify. Both seems to have the features I'll need and her needs than Get 64 GB of DDR 5 to start and add more when the price drops. Both have plenty of m.2 slots for plenty of storage. Any thoughts on the 2 above.

Choice of coloring, literally. That's about the only major difference in those boards. Once you get that high-end in choice there's not much difference in any of the mobo's. You'd need to move upto the Asus Extreme or MSI Godlike to take the next step up, and there's not much difference there either other than a more extensive bios and tinkering platform.

Either one is nice and will allow that 12900k to stretch its legs.
