Hello and thank you all for your time. Here's some background information.

I build a new PC about once every 5-7 years and I don't upgrade along the way. I usually just do a full replacement so I try to go all out when I do build one.
Current build is based off 5820K and it's just not holding up anymore (random lags/pauses etc). PC is virus free, clean, low temps, always well taken care of. I think it's time has simply come (had to dial down the OC the other day as well as it wouldn't boot @ 4.4 1.35v).

Here's my planned build:

My daily workload looks something like this:
35+ tabs of Google Chrome (all active charts of stocks) so it isn't just resting pages (price constantly moving).
Opera for some specific tabs (3-5 tabs)
Trading software (Thinkorswim, single core dependent I believe)
Telegram
Discord
Media player (Currently using JRiver)
Steam
Some type of game during downtime like DotA 2 (I DO NOT close the background tabs at all during this time, they must stay open for alerts).

Please let me know anything I should change (very much prefer to stay Intel). Definitely curious about ram speeds/timings/etc. as I don't know too much about ram in general nor what the 10900K can utilize effectively. Also should I be concerned about RAID 1 or RAID 0 or any specific type of SSD setup? Not sure what these do to be honest.

Thank you!

Any reason not to consider AMD?
More cores, more performance on both gaming and workstation...
