So I'm building a new gaming rig after several years out of the game and could use some advice on graphics cards and monitors.

Question: What type of graphics card(s) should I get for high quality gaming on a 3440x1440 monitor? Ideally, Ultra settings at a high frame rate.

I'm considering the Dell AW3418DW 34.1" 3440x1440 120 Hz Monitor but am certainly not locked into it. I play games such as Assassin's Creed, Battlefield, Fallout, Civilization, etc. I also do some photo editing in Adobe Lightroom. Budget is ideally $2,500 but could go up to $3k.

Also, any feedback on the rest of the build is appreciated, particularly the MOBO, CPU, and Case.

1440P @ 120hz is a maximum of 120 fps. Check out Gamers Nexus on youtube. You could switch out the i7 and over-clock an i5 10600 @5.1 Ghz resulting in better performance then save more money for the 2080 TI.
