Question New Gaming Monitors w/ Streaming

Simply put, currently I have 2 60hz 1440p 27inch monitors.

I'm going to be buying a new PC for the holiday's (Parts listed below if curious), and the thing I have not considered until now is that my monitors are not really Gaming Monitors and are most likely in need of an upgrade.

I'm curious as to suggestions with the following regards:

1) Does G-Sync vs Freesync matter in the overall scheme?

2) I stream, so do all my monitors need to match? I will want to run 3

3) Which options would be the best? I'd like to keep the cost of all 3 together under $1000 at MAXIMUM, would prefer to pay less if possible
Requirements:
Size: 27"
Resolution: 1080P (Currently have 2 1440p, but streaming wise its less complicated to just go 1080P)
Curved: Would be nice, but not a 100% must
Vesa Mount: Yes
