Build Advice New graphic design/gaming computer (buy parts in Japan) ?

Fellow Tom's Hardware comunity,

My actual system is giving me already a lot of headaches (i7-5820K+X99S+970 G1 + 970 M2 SSD 500GB + 16GB RAM (4x4)) and soon I will be in Japan for a few weeks.
I think, considering that the prices there are considerably lower than in Europe, it is a good opportunity to build a new PC.

I will mainly spend the computer for gaming, but I'm doing time to time graphic design in After Effects and Photoshop. (Right now, I need insane hours to render pretty much anything, and after effects throotle a lot during previsualizations)
I'm not sure I'll buy all components at once and haven't set a budget yet, but I'm willing to go on the medium-high quality way.
I'd appreciate recommendations specially on the CPU, and Motherboard, I can suppose the rest of the components (RAM, PSU, Cooling, etc)

Sound card and so it's not important, I have a Focusrite Scarlett on my build.

CPUS:
I've been watching the 5700X, 5800X ; But was told to switch to Intel, I suppose the 12700K and the 13700K are their relevant ones. Opinions?

MB: (Looking for a motherboard with 2x M2 4.0 at least to place a decent memory set for after effects)

Be kind and help me figure out the best array, then I'll share with you some pictures when it's built :)

For motherboard + CPU around 600-700€, but can spend more.
the i7 5820K lasted almost 8 years, I'm expecting to replace it with another timeproof computer.

Thank you very much for the input.
I have already a RM750i, and for cooling I was expecting to re-spend also my Kraken x61 which is still keeping my CPU at 28º at iddle and 42º at load.

For the GPU, I will spend my 970 G1 untill nvidia release the 4080, 4070 and 4060, then take a decision but at the moment.
