I just bought a 1050 ti, I upgraded from a gtx 660 so it is a few generations newrs, the only thing is, I feel like there is no change. I have the amd FX 8320 and 12 gigs of ram, and i updated all the drivers. But when I launched gta V i still don't get much better performance from what I see.. am i doing something wrong, or missing something?

First thing is to test that all is working well. I'd run 3dmark to see what kind of scores you get. On GTA V, be aware that the game is also CPU dependent. So I'd run MSI Afterburner or some other monitoring program, while you run GTA V and see what kind of CPU usage you are getting. If you are getting near 100% CPU usage, this means your CPU is maxed on that game and that's why an upgrade in videocards isn't making much difference. You should be able to run the game at higher settings, since you now have more vram, is this true with your setup?
