New multi monitor build for stock trading

Hi,

I'd like to build a 6 monitor computer for stock trading.

What I have in mind is:
CPU: Needs to be an Intel CPU, I've been considering i7-7800k vs i7-7820X, not sure if the 8 cores will provide better performance, also open to other suggestions.
Motherboard: Not sure, depends on the CPU I guess
RAM: 32 GB
GPU: Needs to support 6 monitors
Storage: SSD

I'd prefer not to overclock.

Budget: $2500, flexible.

My main concerns are performance and stability.

Hopefully I haven't forgotten anything.

Is your budget of $2500 only for the PC, or should the peripheries be included?
A HEX monitor stand costs $150 and above. 6 monitors cost another $6-800.
A i7-7820X might be an overkill. Anyway I would also get a UPS Battery and set up a back-up drive for data redundancy / recovery.
Get a special video card, such as the http://www.matrox.com/graphics/en/products/graphics_cards/c-series/c680/ with 6 outputs, that will set you back with another $5-600.

As for the monitor I would advice something with VESA mounting and slim bazels, such as the BenQ GW2470

The $2500 budget is for the computer only.

Do you have any experience with Matrox GPUs?
Do you think a liquid based cooling system will help?

No, I haven´t used any Matrox card yet.

Yes, the CPU you choose has a high Thermal Design Power (140W), water cooling is justifiable. I would in that case recommend a 360mm AIO, such as
