The PC is used for home management, video streaming (OBS), surfing, and gaming (Lost Ark). My last build was in 2016. I'd like to future-proof my build and have the option to upgrade later. No overclocking, but would like the option.

My budget is +/- $1,200.

I'm building around the i5-12600K processor as I bought this on a deal.

Here's my choices currently. This should get me a good foundation. GPU selection will come later.

You have very good strong set of parts.
A cpu upgrade is not likely soon.
As a practical matter, it is not "future proof"
Unless you will upgrade in 6 months, most will find that 2-3 years down the line that both a cpu and motherboard change will be what you want.

I have essentially the same system.
There is a catch 22 on getting the lan going.
You need to download and install a msi app to get the correct drivers.
Unless you have wifi, that can be tricky.
Google will help.

My general advice is to avoid "tweaks"
These processors are plenty strong at default.
Most will do better by allowing the turbo mechanism to do it's thing.

Do you have a case?
Buy one with good front intakes, 3 120mm or 2 140mm intakes are needed to feed the 3080 and nh-d15s coolers.
Good airflow will allow better cooling and the turbo to work better.

Case, PSU, and the rest will come after these are finalized.

Thanks for the LAN tip. I read that someone in my research. I'll make sure to get the drivers on a USB.

I tried that to no avail.
It seems that the only working lan driver comes from the msi app.
It is confusing.
I also really wish that msi had included a user manual in the package.
It is only available by download.
