1. thoughts on barebone MB? I don't want DDR5
2. will stock cooler do the job?

Check cooler height clearance against case. The U9S is pretty short and I use one as well. Decent cooler for an 11600K, if not optimal. Have to make concessions for size.
Check your RAM height against the cooler. Noctua has a good chart for that. (those sticks should be fine, they are low)
Check size of GPU to case parameters.
