I am really new when it comes to building pc's. I have read a couple of articles and watched the same amount of videos to feel confident enough to attempt my own build. I am aiming for a mid range build under $1,200 us dollars.

I hope for the build to be good for at least 2 years before i need to upgrade anything major. By good, I mean, I hope to accomplish 60 fps at 1080P with high settings(turning off AA, Water reflections and turning down shadows do not bother me so much).

I went to pc part picker and picked out some things I think are ok, but would like some advice to see if what I picked out meets the above requirements, or if there are things I could do better. Here is the link https://pcpartpicker.com/list/L2t7TB.

Any help would be greatly appreciated as I hope to become really good at building and tinkering with computers.

I edited your list a bit with following changes:
double the SSD capacity fro 23$ (same performance, warranty, reliability)
no need for cooler, 1600 comes with one that is decent enough. 212 evo will not do much better, so in a future you can add a better cooler.
Swapped the GPU, way too expensive without justification.

If you wanna save up some money since you´re a bit over the budget and only looking for 1080p, maybe you would consider saving $100 and going for a 1060 6GB edition, it will still give you 1080 at ultra on most games with very good fps, indeed the rx 580 is a bit better than it, but would be a bit more affordable.

Yeah the 1060 3GB is almost same performance as the 6GB, I would just recommend the 6GB to make it a bit more futureproof, also another option since I just saw it, is maybe getting instead another PSU, it seems seasonic 550W 80+ Gold Fully modular is at sale on Newegg right now at $60 so that would allow changing the R5 1600 for the R5 1600X which will give a boost in gaming.

So almost 7 years later I finally built my computer lol. i choose to go with a ryzen 5 3600, x570 asus tuf gaming mobo, rtx 2060 super gpu, seasonic 650 w gold, 16 gb cosair rgb 3200mhz ddr4 ram, nzxt h510 case, 1 tb kingston ssd, cooler master hyper rgb evo 212. I am running into some snags with the build but i started a new thread for that this year 2020.
