Good day everyone! I have asked for the community's advice a few times before and everybody was so helpful, so thank you for that. I need your help and suggestions one more time.
I am looking to build a new well balanced rig for: everyday use, gaming and University related tasks (using the Office Suite, video streaming, webex and zoom, a little bit of video editing etc.)
Approximate Purchase Date: within December or right after new years eve
Budget Range: 2000 euros, a couple hundred more (or a lot less 😛) is not a dealbreaker
System Usage from Most to Least Important: gaming, using office suite, conference calls, video streaming and general all around lollygagging
Are you buying a monitor: Yes, 27 inch preferably
Parts to Upgrade: everything
Do you need to buy OS: No
Preferred Website(s) for Parts: some of the most known stores in my country are: www.plaisio.gr
www.mgmanager.gr
and www.e-shop.gr has very good deals on SSDs from time to time.
Location: Greece, Athens
Parts Preferences: I never had bad experience with intel and gigabyte, but i am open to suggestions.
Overclocking: definitely not
SLI or Crossfire: nope
Your Monitor Resolution: at least 1920x1080. As long as it is easy with my eyes ( I spend a lot of time in front of the screen).
Additional Comments: don't care about bling or RGB, wouldn't mind to have some. Now, as I said I would like to play modern games (Baldur's Gate, Starfield and such) decently, I don't care about reaching an obscene amounts of frame rate, as long as it is playable, smooth and pretty looking- I am satisfied . Also I need to be able to work on multiple tabs of software, typing in word and streaming at the same time, sharing my screen etc.
And Most Importantly, Why Are You Upgrading: I' ve had my old pc for about 7 years now and I figured it's time for a new build. But after all those years it seems that everything has changed , there are so many options that it's getting ridiculous! One more thing , I would prefer it that the new system lasts at least 5 years without needing a major upgrade.

I used partpicker because it is easier to see compatibility issues.
This build, according to partpicker, will be around 1600 $ . In my country unfortunately we have a high tax on electronics (24%) so it will cost more likely in the area of 2k (already checked). With that being said, do not strain yourself finding better deals, as I said before I will buy the parts locally.
What I need from you is suggestion on:
How can I maybe improve this build?
Is this build going to cover my needs?
Do you spot any compatibility issues?
Past experience with said parts?
And lastly, what would your take be , if you were in my place.
