Question no bootable device

hi , i had two hdd from my H81 motherboard and i changed everything to 12th gen b660. problem is that i see those hdd on my bios but not boot section. i had important stuff on desktop and need to boot once more to that old windows 10 to take all and later install windows 11... i have bootable USB so i have access to CMD . how to get it right? thanks
 
Best way would be to install windows on an empty third drive, without any other drive installed, and after you get into windows you can copy paste the files over as long as you are logged in as admin.

You could also use that USB to create a ubuntu (or other linux) live distro that will also allow you to copy things around.
