No Fans! What's to blame?

I've posted a few times already about my computer crashing only when playing BF3.

I've got the latest drivers (11.10/CAP 4), and while performance has gone up considerably - I'm still afflicted with 30-minute-in crash.

I've begun to assume its heat issue, as these cards (x2 Sapphire 6970s) have never displayed any discomfort when gaming. This is a very demanding game, and I do run it on ULTRA settings.

My CPU runs at 43 C max when gaming with BF3, so I doubt its to blame.

So...

on to the cards...

I did an experiment: I opened up the side panel of my case and plugged in an external fan that I'd used to cool my apartment. With the fan shooting into the computers side, I never suffered a crash while playing BF3. Once I unplugged it, after a few minutes, the game crashed. My cards read

1. 85 C
2. 64 C

Not too bad, right?

I should also mention that after I unplugged my external fan, I was curious as to why the GPU fans weren't going up in speed to accommodate the rising heat levels, so I opened up CCC while ALT-TABing the game, and I went to AMD overdrive, and activated it to try and get manual control of the fans.

While CCC read that overdrive was on, it said the following: "Clock settings are applied only when the GPU is running in high-performance mode", and prevented me from adjusting any of the sliders. They remained grayed out. Shortly after, my game crashed.

What's the deal here?
