I recently bought the msi M560 pro vdh motherboard for my new cpu and there's no boot option for my ssd.

The only boot options are:

UEFI hard disk
UEFI CD/DVD
EUFI USB hard disk
UEFI usb key
UEFI USB floppy
UEFI network
disabled

I have a Samsung evo 870 2tb ssd with 900gb of files.

Solution
Ok I reinstalled windows on my ssd but there's no option to choose my ssd as boot.
You have to install windows with only single drive connected.
If you don't do that and you have another bootable drive connected, then your ssd with windows doesn't get made bootable.
You got a new motherboard. Reinstall windows then.
With new motherboard this is recommended and sometimes unavoidable.

If you try to avoid reinstall, you'll get several possible issues:
boot mode incompatibility (system doesn't boot),
drivers incompatibility (bsods, crashes, bad performance),
windows activation issues.
