Hi guys,
I'm building a machine, and am having trouble finding the Noctua NH-U12S SE-AM4 for sale. Everywhere is either out of stock and doesn't know when its coming in or doesn't have it period.
If anyone knows where I can get one please let me know, if they aren't avvaliable anywhere, what other cooling options do I have for the Ryzen 7 1800x. Here is my current part list:

Thanks in advance for help.

The NH-U12 SE-AM4 should be available soon enough. I wish I could offer better advice than waiting for market availability. You could also choose another cpu cooler which manufacturers is compatible with AM4 mounting platform. However, there are some manufacturers (thermalright for one, though am unsure if it is even dependent on manufacturer at all) and buzz about AM2/3 being compatible with the AM4 mounting platform. No idea as to which or whether this applies to specific models at all, or if its entirely recommendable. I did see a vid the other day of someone deliberately using his old AM3 mounting system rather than the new AM4 mounting platform that he had along with his Ryzen CPU, and it did work for his AIO watercooler. Here are a few links you may find helpful.

Note: Noctua also sells AM4 kits for your preferred cooler, there may be locations with availability listed other than the ones you may have tried, if they're truly necessary.

Thanks for your response. What if I was to add this to the build instead of the Noctua fan: Hydro Series™ H100i Extreme Performance CPU Cooler

Would this work?

According to Corsair's site, AM4 is supported by that model. However, a quality air cooler often performs as well or better than some AIO water solutions. Even pricey custom loops can leak, never mind cheaper AIO's (something you don't have to worry about with air cooling). This isn't to turn you or anyone off to watercooling, just a reminder is all. Anyhow, if I were you I'd do some more research as to whether AM3 mounting are generally or totally compatible with AM4, before making your decision. From what I've seen so far it seems a number of AM3 coolers, (perhaps all or most?) both air and water, are compatible with the newer AM4 Ryzen platform.
