Looking to build a video editing (1080p) with maybe a little gaming mixed in. Budget is 500-750, looking to spend as little as possible.

Ryzen 7 2700x for $170 for black friday

Probably a RX-570-590 for $130-180

Crucial P1 500 GB M.2-2280 NVME $67

Seagate Barracuda 2 GB $50

EVGA Supernova 650 G5 $70 I know overkill but great price.

Looking for help with memory and MB. What speed/brand should I be looking at for memory?

What motherboard?

Solution
I'd opt for either the 570/580 or a GTX equivalent. The Nvidia's are more power efficient. The list looks fine but what board are you pairing all that with? You should aim for the B450 chipset. You should also look at DDR4-3200MHz ram kits(dual channel) to get the best out of your platform.
