So, I realized that I got this message on my adaptive-sync monitor. Will G-sync still work with it? What does it mean?

Well, it means it hasn't been validated as G-Sync compatible. Nvidia keeps a list of "officially" compatible non-G-Sync monitors on their website.

Lots of monitors work nowadays without official support, lots don't. Given that you asked a question about a specific monitor without letting us know, well, the specific monitor, there's no much else to add at this time.
