Question Nvidia drivers ?

So currently I have Nvidia driver 566.36 installed. When I had the latest drivers installed a lot of issues started happening, Apex Legends started crashing every 20 mins, Borderlands 3 kept crashing as well.
But since I installed that specific driver mentioned above, those issues are gone.
Now my question is, I tried playing the new Doom, but it is asking me to install the latest driver.
But if I do, I'm kinda scared that it will start making problems again and crashing games.

What should I do exactly?

In case anyone asks for my PC specs:
CPU: i7 12700k
Motherboard: MSI PRO Z790-P WIFI
Ram: G.Skill Trident Z5 RGB 32gb
Graphics Card: MSI RTX 4070 Gaming X Trio
Power Supply: NZXT C1000 Gold
 
did you overclock your sytem?
how hot is it getting? gpu and cpu

update bios as well
update drivers, chipset as well
Temps are all normal, no overheating nothing at all.
I don't overclock my system as I don't see any reason for me to ngl, and recently i disabled XMP since it was giving me memory issues whenever i ran memtest, its on the stock speed right now and I don't really know how to increase it manually.
Am not sure if my bios are up to date or not i can provide the driver number.

with xmp/expo off, do you get errors with memtest as well?
No after i turned off xmp i ran another memtest that came back with zero errors, and after that i stopped getting blue screens as well/random restarts
Thats why am not sure if i should manually overclock my ram to about 5500 MHZ, when XMP was on it auto set it to 6400 MHZ which was a bit too much for my CPU to handle i assume even though its kinda brand new.
