1ms response and 144hz won't change because of multiple monitors. all monitors will still run with those specs.
based on you having 3x $700 monitors i'm assuming you are looking to get max settings from your games. you need a massive computer to get 144hz/fps on all 3 of those if you want ultra settings. even quad sli gtx 980 ti would run closer to maybe 80hz/fps on ultra settings with a game like witcher 3 @ 1440p on 3 monitors. no graphics card combination is going to get you near that 144hz/fps with ultra settigns. to run a tripple 1440p monitor setup comfortably you would need to lower your graphics a decent amount. the technology isn't there yet. possibly pascal will give it a good run for the money when it is released.
