For the same price , which graphics card is better ?

GTX 560(Fermi) or HD 7850 ?

Btw , do you guys know what is the (Fermi) ?

7850 hands down. Newer tech, more power, more efficient, runs cooler, & probably not much more money.

Edit: Sorry just seen that you said same price, that makes it a no-brainer.

Fermi refers graphics core in the 5xx series of nVidia GPU's, nothing to worry about.
