I know that Google / Gmail account could store your cache, bookmarks, saved passwords etc on the server and if you log with another computer those datas may be downloaded / sychronized to the local computer.

I may need those datas used on another computer so that anonymous mode is not my option, at the same time, how can I ensure that all those datas are completely and cleanly deleted from the local computer after finishing using it? I'm not very expert at the computer and internet things

First, you sign out of Chrome after using it. Then you press Ctrl+H to open history, and you'll see the 'Clean history' option on the left. Click that and make sure you select 1) 'Advanced' tab 2) time interval corresponding to the time you spent in chrome 3) every bit of data available for removal
