If you are just gaming there is no need for the 6700K. You can just go for the i5 6600K or 6600/6500/6400. You have no GPU. You could go for a SeaSonic PSU if you want, they are cheaper and same or better quality. If you aren't adding a GPU the 60Hz monitor is fine. But if you are adding a GPU you might want to go for a 144Hz monitor

If it fits in the budget, the i7 isn't out of place. The only conceivable upgrade would be to a 1080 and that would require more than the 100 gained by stepping down from an i7 to an i5. That being said, the i7 doesn't offer more gaming performance is true for now, but going forward SMT optimized games may happen. In general, if it's in your budget and shaving off a 100 bucks won't help your build in a significant way, the i7 fits very well.

That's a solid PSU and probably the cheapest high quality gold rated psu you can find for that power output. As for graphics, OP said he has a Gigabyte 1070.

I'm no expert on monitors, but depending on the games and settings, a 144Hz monitor might provide enough benefit for the extra cost to be in consideration here.
