Instead of buying two $1500 gaming PC's for my two young adult sons who have separate bedrooms, could it make sense to spend $3000 total on a much better PC, two monitors, and some cables? One works, other is in school for graphic design, their schedules are somewhat offset, which got me thinking...

Not really, no. Because of how quickly diminishing returns set in, I don't see a real benefit to having two people sharing a single $3000 PC compared to two $1500 PCs.
