Equipment: I have the Ubiquiti EdgeRouter 4, an engenius managed switch, 4 different AP's

Here is what I want to do: I want TWO VLANs on the network, one for administrators and one for the main hosts. I want the VLAN for the main hosts to be associated with 4 different subnets. This is because I am going to have each access point on a different subnet. Is this possible, or is there a better way of doing this? There will be a lot of traffic on all of the different access points, which is why I want each of them on a different subnet.

I think what you mean is two networks with no routes to each other each consisting of multiple subnets.
All the subnets in your admin would have no routes to any subnet in your main LAN.
It's common to have multiple subnets for performance reasons. cluster traffic for example needs it's own subnet.

create a vlan for each AP. create routes between them. leave admin as the untagged vlan. do not allow any traffic from other vlans into admin or out of.
