Does anyone know if NAT type matters if you use Ethernet and not wireless for your connection? If it does matter, will disabling UPnP and assigning a static ip to the Xbox One and opening some ports solve the problem without messing up the connection for other devices?

Solution
NAT type matters regardless of wheather you are on wired or wireless

for VOIP on Xbox, and if the game you're playing uses peer to peer (instead of dedicated servers) a closed NAT type will never be chosen as host.

you either need to forward all unsolicited packets to the xbox manually (aka "put it in the DMZ") or forward specific ports to the xbox (such as UDP 3074 amoungst others)

or keep upnp on.
