I'm building a PC Gaming Desktop, I have the following in my Newegg cart ready to go:

1.) Rosewill ATX Mid Tower Gaming PC Computer Case with Red LED Fans, Tempered Glass/Steel, Optimal Airflow, USB 3.0 - CULLINAN MX-RED

2.) ASUS ROG Maximus XI Hero (Wi-Fi) Z390 Gaming Motherboard LGA1151 (Intel 8th and 9th Gen) ATX DDR4 DP HDMI M.2 USB 3.1 Gen2 Onboard 802.11 ac

3.) Intel Core i7-9700K Coffee Lake 8-Core 3.6 GHz (4.9 GHz Turbo) LGA 1151 (300 Series) 95W BX80684I79700K Desktop Processor

4.) GIGABYTE GeForce RTX 2070 Super WINDFORCE OC 3X 8G Graphics Card, 3 x WINDFORCE Fans, 8GB 256-Bit GDDR6, GV-N207SWF3OC-8GD Video Card

5.) G.SKILL TridentZ Series 16GB (2 x 8GB) 288-Pin DDR4 SDRAM DDR4 3200 (PC4 25600) Intel Z370 Platform Desktop Memory Model F4-3200C14D-16GTZ

6.) WD Blue 3D NAND 1TB Internal SSD - SATA III 6Gb/s 2.5"/7mm Solid State Drive - WDS100T2B0A

7.) Seagate BarraCuda ST3000DM008 3TB 7200 RPM 64MB Cache SATA 6.0Gb/s 3.5" Hard Drive Bare Drive

8.) EVGA 750 BQ 110-BQ-0750-V1 80+ BRONZE 750W Semi Modular Includes FREE Power On Self Tester Power Supply

9.) Cooler Master MasterLiquid Lite ML240L RGB AIO CPU Liquid Cooler, Sleeved FEP Tubing, Dual 120mm RGB Air Balance MF, RGB Software compatible, Dual Dissipation Technology

My planned budget was $ 2,500 but I'm now maxed out at a Grand Total:
$2,733.79 CDN (2082.45US). Including taxes.

Any comments on if this should be a mid level Gaming machine? (again with $2500ish budget) or Is there a manufactured PC that someone knows of with similar specs for similar or better price?

Well For now I'm actually stuck on 60 HZ monitor, lol Hoping to get a decent monitor end of next month, black friday deals. Something 4k then for sure.

I currently use 1920 x 1080 on my alienware 17

I want to go ahead & order components for my system today while off work. The Last piece of advise I'm looking for:

Which Is better Ram option?

G.SKILL TridentZ Series 16GB (2 x 8GB) 288-Pin DDR4 SDRAM DDR4 3200 (PC4 25600) LATENCY 14

Or

G.SKILL Ripjaws V Series 32GB (2 x 16GB) 288-Pin DDR4 SDRAM DDR4 3200 LATENCY 16?

I know that Latency 14 is faster but, in terms of performance & future proofing my system build, would the 32GB's at Latency 16 be best?
