Hi, This is my first build for gaming, ocassionally streaming (Not as content creator, just for fun) and code. I'm going to use Manjaro Linux as OS.

I'm not sure of the CPU choice, do you think Ryzen 5 3600 is good enogh, or should I go for the 3600X or 3600XT? And what do you think about the motherboard is it ok or should I go for a better choice? The rest of peripherals it's not considered in this build. Finally, what do you think about the price?

Not bad. The Ryzen 5 3600 is a very good mid-range CPU. I made a couple changes here for some better price/performance.

I think you got very well balanced and quality equipment choices, except for the cpu cooler which is wasted money since it's really no better than the stock cooler, just a little quieter.
The mobo is one of 2 best under $300 x570's, the psu is a Seasonic Focus platform, storage is respectable, ram is good for 3rd release Ryzen, case choice is personal, but still decent.

There are cheaper options that'll do just as well. A decent B550 instead of the X570, other psus, better coolers. Options might be limited, especially by location, but things are gradually starting to get back to normal, somewhat.

I would rather spend in a quality graphics card than on a over priced motherboard.

Everybody has an opinion, which are dictated by personal tastes. I prefer liquid cooling or oversized air, just to not have to run fans at close to max speeds. Silence is a priority. That includes using oversized graphics cards just so they don't have to work hard, lowers usage and temps and fan speeds.

There's plenty of variables to change opinions, budget happens to be one too.

I personally wouldn't use Geil ram on a Ryzen, but that's me. It's not tested enough, used enough, reported on enough to warrant me being a Guinea Pig for the sake of a few $. But thats my opinion.

Only issue with the Evoke OC is it can get loud. It does have some excellent thermal performance though. The ASUS motherboard might be more expensive, but it is rock solid. It has 12+2 phase power delivery, 2.5GbE port, WiFi 6, and better audio. The power delivery is the biggest thing. This board has better power delivery than a lot of budget X570 motherboards.
