This is mainly for gaming and I have a 1440 monitor and might use sometimes on a 4K tv.
The Ryzen 7 2700X is also an option with either graphics card.
Do all modern motherboards like the ASUS ROG STRIX B360-H GAMING have wifi and bluetooth?
Planning to order shortly on my lunch break so your thoughts greatly appreciated.

I would prefer a 1080ti with a Ryzen 7 2700X. THe 1080ti does have more power then a 2070. The Ryzen 2700X is the best price/performance option. Neither of the i5 do have Hypertreading and therefor have less threads then the 2700X

I'm leaning for towards the 1080i as you get better performance currently but should I be looking to future proof with this ray tracing stuff?

No. Wifi and bluetooth are premium features - usually not included in desktop motherboards.
Only select motherboards have those features included.

ASUS ROG STRIX B360-H GAMING doesn't have wifi nor bluetooth. Have to buy it separately.

For example ROG STRIX B360-I GAMING motherboard has wifi and bluetooth.

You should take in account that you can only overclock with a z370 or z390 with the 8600k and z390 with the 9600k. Mbs with wifi have like two gold looking small cilinders on the usb part, you obviously want to still check its spec sheet but thats an easy way to detect it. Also both cpus are about the same price and definitely cheaper than thr 2700x. And you have to take in account cooling since intel doesnt provide one meanwhile amd sends an ok rgb one.
