OS isntall on ssd

Hello!
I am planning on buying a ssd (samsung 850 EVO 250 gb) for my OS [Windows 10] and some programs that I use often, I currently have everything on my WD blue 64mb 1tb 7200 rpm hdd.
I was wondering that if I were to install the ssd, then remove the hdd and install windows anew onto the ssd and then connect the hdd again, how would I set it for it to boot the OS off of the ssd instead of the hdd. I would like to have the OS still on the hdd so if something happens on the ssd I can still boot it from the hdd.
I was also wondering about how I could move all the files from my 1 tb hdd to a 2 tb hdd that I am planning on buying, so that I can use the 2 tb for my general files and the 1 tb one for special stuff like videos and picture and use it generally as mainly for storage of that sort of thing only.
 

You set up boot order in BIOS.

Connect all drives, copy files from hdd #1 to hdd #2. Simple.
