I am using 8320... Have a VERY solid and stable 4.5ghz over clock going right now. GREAT performance, so Im not too concerned by this problem, but I'd like to know why its happening.

Im finding if I go over 4.6ghz, performance deteriorates. YES I am using stability programs to verify stability (prime95, pi, and intel burn test). I can get a stable 4.9ghz. HOWEVER, when i play games at these settings I get HORRIBLE performance! Going from 80+ fps on PS2 down to 5-10 in low intensity areas and the game takes forever to load.

Any ideas?

As jimmysmitty says, that you CPU pass the stability test doesn't mean that you have an stable overclock. In this case, I would suggest you leave the CPU at 4.6GHz (above that FX doesn't scale very well really) and try to rise the NB frequency that can give you more performance in your rig.
